Method
Doner Meat
Marinate and cook doner-style
In a large bowl combine olive oil, minced garlic, ground allspice, cinnamon, nutmeg, smoked paprika, black pepper, sea salt and brown sugar. Add the thinly sliced lamb doner meat and toss thoroughly so all slices are evenly coated. Cover and refrigerate for at least 1 hour, preferably 4 hours or overnight for best flavor.
Preheat oven to 200°C (400°F). Spread the marinated lamb slices in a single layer on a large rimmed baking sheet lined with foil and a wire rack if available. Roast 12–18 minutes, turning halfway, until edges are caramelized and meat is crisp in places. For extra char, finish under high broil 1–2 minutes watching carefully.
Once cooked, thinly slice any larger pieces or shred slightly with tongs so the meat is doner-style shreds/strips. Keep warm.
London Jerk Sauce (award-winning style)
Make the sauce
In a blender or food processor add scotch bonnet peppers (use fewer or remove seeds to reduce heat), green onions, thyme, garlic, ginger, soy sauce, dark rum, molasses, lime juice, vegetable oil, smoked paprika, allspice, cinnamon, salt and black pepper. Blend until a smooth, thick sauce forms, scraping down the sides as needed. Taste and adjust salt or lime. If sauce is very thick, thin with 1–2 tbs water or oil to reach a drizzling consistency.
Reserve about one-third of the sauce for drizzling over fries and meat when assembling. Keep remaining sauce in a jar chilled for up to 1 week.
Yogurt Sauce (signature)
Combine yogurt sauce
In a small bowl whisk together Greek yogurt, mayonnaise, lemon juice, minced garlic, chopped dill or mint, salt and black pepper until smooth. Taste and adjust acidity or seasoning. Chill until assembly to allow flavors to meld.
Fries & Finish
Prepare fries
Rinse cut potatoes thoroughly in cold water until water runs clear to remove excess starch. Soak in cold water 20–30 minutes, then drain and pat completely dry with towels.
Heat vegetable oil in a deep fryer or heavy pot to 160°C (320°F). Blanch the fries in batches for 4–5 minutes until softened but not browned. Remove and drain on paper towels.
Increase oil temperature to 190°C (375°F). Fry blanched fries in batches until golden brown and crispy, 2–4 minutes. Drain on paper towels and immediately season with salt and chopped parsley if using.
Assembly & Serve
Assemble the Large London Jerk Doner Box
Divide fries into serving boxes. Top fries with a generous portion of hot doner meat. Drizzle the reserved London Jerk sauce over the meat and fries (about 3–4 tbs per large box) to achieve a smoky, spicy coating. Finish with several spoonfuls of the yogurt sauce (2–3 tbs) in a zigzag or dollops to add cooling creaminess.
Serve immediately while fries are hot and meat is warm so sauces meld and textures remain crisp and saucy.
