Prepare ingredients

Remove doner meat from the refrigerator and break up any large clumps so slices separate. Measure and have ketchup, sliced onion, and pickle slices ready. Split the unseeded bun and soften butter to room temperature if needed.

Toast bun

Heat a skillet over medium heat. Add 1 tsp neutral oil and swirl to coat. Spread 1 tsp butter on cut faces of the unseeded bun. Place buttered bun cut-side down in the skillet and toast until golden and edges are lightly crisp, about 1 to 1½ minutes. Remove and keep warm.

Heat doner meat

In the same skillet over medium-high heat, add the thinly sliced doner meat in an even layer. Season lightly with 1/8 tsp salt and a pinch (1/16 tsp) freshly ground black pepper. Let the slices sear without moving for 30–45 seconds, then stir or flip slices to heat through and develop slight crisp edges, about 1–2 minutes total. If meat releases excess fat, tilt skillet and spoon off any large pools, leaving a thin coating to flavor the meat.

Assemble burger

Place the bottom half of the toasted unseeded bun on a plate. Pile the hot doner meat on the bun to form a compact portion (about 0.5 lb total). Scatter the thinly sliced onions evenly over the meat, then arrange 3 pickle slices on top. Squeeze or spread 2 tbs ketchup over pickles and onions. Cap with the top half of the toasted bun.

Serve

Serve immediately while the meat and bun are hot. Optionally serve with extra ketchup or pickles on the side.
