Make filling

In a medium bowl, combine softened cream cheese, shredded cheddar, chopped green onions, minced garlic, smoked paprika, lime zest (if using), salt, and black pepper. Mix until fully incorporated and smooth. Taste and adjust seasoning. Transfer to a piping bag or cover and chill for 10–15 minutes to firm slightly, which makes stuffing easier.

Prepare jalapeños

Wash jalapeños and dry. Slice each pepper lengthwise in half and use a small spoon to scrape out seeds and membranes; leave a thin wall of flesh so the halves hold filling. If you prefer milder heat, remove all membranes and rinse briefly and pat dry.

Fill peppers

Pipe or spoon the cream cheese mixture into each jalapeño half, filling to level with the top but not overstuffing. If using bacon, cut each strip in half and wrap one half-strip around each filled half (secure with a toothpick if necessary). Chill filled peppers on a tray for 10 minutes to set slightly—this helps coating adhere.

Set up breading stations

Place flour in a shallow bowl. In a second bowl, whisk eggs with milk until combined. In a third bowl, combine panko breadcrumbs, grated Parmesan (if using), cayenne (if using) and 1/2 tsp fine salt.

Bread the poppers

Working in batches, dredge each filled jalapeño half first in flour (shake off excess), then dip into the egg mixture, letting excess drip back, and finally coat thoroughly with the panko mixture, pressing gently so crumbs adhere. For an extra-crispy double coating, repeat the egg and panko step once more. Place breaded poppers on a plate or tray while you heat the oil.

Heat oil

Pour oil into a heavy-bottomed skillet or Dutch oven to a depth of about 1–1.5 inches (enough to partially submerge poppers). Heat over medium-high until oil reaches 350°F (175°C) or until a small breadcrumb sizzles on contact and turns golden in about 20–30 seconds.

Fry the poppers

Carefully add breaded jalapeño poppers in a single layer without overcrowding (work in batches). Fry 2–3 minutes per side until golden brown and cheese inside is melted, turning once with tongs. If bacon-wrapped, ensure bacon is cooked through (an additional minute per side may be needed). Use a slotted spoon to transfer cooked poppers to a wire rack set over a baking sheet or to paper towels to drain. Sprinkle with chopped cilantro/parsley while hot.

Oven alternative

To bake instead, preheat oven to 425°F (220°C). Place breaded poppers on a parchment-lined baking sheet, spray lightly with oil, and bake 15–20 minutes until golden and cheese is melted, turning once halfway. Baking time may vary with oven and pepper size.

Whisk together sour cream or Greek yogurt, lime juice, hot sauce (if using) and 1/4 tsp salt. Chill until ready to serve. Serve alongside warm poppers.
