Method
Hash Brown Bites
Prep potatoes
Peel the whole russet potatoes. Using the large holes of a box grater or a food processor shredding disk, shred the potatoes into a large bowl. Immediately place shredded potato in cold water to prevent browning.
Remove excess moisture
After 5 minutes in cold water, drain the shredded potatoes into a fine-mesh sieve or clean kitchen towel. Squeeze and press out as much water as possible (at least 3–4 good squeezes) — removing moisture is essential for crispiness. Transfer the dried shreds to a clean bowl.
Add onion and binder
Add the grated onion (squeeze excess moisture from onion if very wet), 1 beaten egg, 3 tablespoons flour, 1 teaspoon salt, 1/2 teaspoon black pepper, 1/2 teaspoon garlic powder, 1/2 teaspoon paprika, and minced chives (if using) to the shredded potato. Mix thoroughly until evenly combined. The mixture should hold together loosely when pressed; if too wet add 1 tablespoon more flour at a time.
Form bites
Using a tablespoon or small cookie scoop, portion heaping tablespoons of the potato mixture and compress each portion firmly between your palms to form compact bite-sized patties (about 1 to 1 1/4 inches in diameter). Place formed bites on a tray lined with parchment. Keep them tight so they don't fall apart when frying.
Heat oil
Pour about 1/4 to 1/2 inch of vegetable oil into a large skillet (approximately 1 cup total). Heat the oil over medium-high heat to 350°F (175°C) — or until a small piece of potato sizzles immediately when added. Maintain even heat; adjust burner as needed.
Fry bites
Working in batches (do not crowd the pan), gently place 6–8 bites into the hot oil. Fry until golden brown and crisp on the bottom, about 3–4 minutes. Carefully flip with a spatula or slotted spoon and fry the other side another 3–4 minutes, adjusting time so the interior is cooked and exterior is golden. If bites are browning too quickly, reduce heat slightly.
Drain and finish
Transfer cooked hash brown bites to a paper towel–lined plate or a wire rack set over a baking sheet to drain excess oil. Sprinkle lightly with additional salt while hot to taste. Keep cooked batches warm in a 200°F (95°C) oven on a rack if making multiple batches.
Suggested Dips
Classic ketchup: Serve ketchup in a small bowl. Sprinkle a pinch (about 1/8 tsp) of smoked paprika on top for a smoky note.
Herbed sour cream dip: Combine 1/2 cup sour cream with 2 teaspoons minced chives or parsley, a pinch of salt, 1/8 tsp black pepper, and a squeeze of lemon if desired. Mix and chill briefly.
Spicy mayo: Whisk together 1/4 cup mayonnaise with 1 teaspoon hot sauce (or to taste) and 1/4 teaspoon smoked paprika. Adjust heat to preference.
