Prepare onion and combine
Peel and very finely grate the onion into a bowl, then squeeze lightly to release some juice. Add grated onion, minced garlic, breadcrumbs, egg, smoked paprika, ground cumin, ground coriander, dried oregano, red pepper flakes (if using), salt and black pepper to a large mixing bowl.
Chill to firm
Cover the bowl and refrigerate for at least 30 minutes (up to 2 hours). Chilling helps the mixture bind and makes shaping easier.
Shape kebab logs
Divide the meat into 6 equal portions (about 165–170 g / ~5.8–6 oz each). Wet your hands slightly and form each portion into a tight, flattened log or oval patty about 12–15 cm long and 1.5–2 cm thick. Press well so they hold shape.
Cook the kebab
Heat a heavy skillet or griddle over medium-high heat and add 1–2 tbsp vegetable oil. When shimmering, add kebab logs without crowding (work in batches if needed). Cook 4–5 minutes per side, pressing gently so they make good contact with the pan, until a deep brown crust forms and internal temperature reaches 72°C (160°F). Alternatively, grill over medium-high heat for 6–8 minutes, turning once. Remove cooked kebabs to a plate and let rest for 3 minutes.

Make garlic yogurt sauce
In a bowl combine 1 cup plain yogurt, 2 tbsp chopped fresh parsley, 1 tbsp lemon juice, 1 tsp white vinegar, 0.25 cup mayonnaise (or salad cream), 0.25 tsp salt and 1/8 tsp black pepper. Stir until smooth. Taste and adjust salt, lemon, or a splash of water to reach desired consistency. Chill until assembly.
Make German-style ketchup sauce
In a small bowl mix 3 tbsp ketchup, 2 tbsp chili sauce or hot pepper paste (reduce if not spicy), 1 tsp mustard and 0.5 tsp sugar to balance. Whisk until smooth; add up to 2 tbsp water to loosen if too thick. Adjust seasoning to taste.
Bread & Assembly
Prepare vegetables and fries
Shred lettuce, dice tomatoes, thinly slice red onion, and slice pickled cucumbers/cornichons. If using fries, either fry or bake 4 cups of prepared french fries according to package or recipe instructions until crisp and keep warm.
Assemble kebabs
Open each warmed pita or lay flatbread on a work surface. Spread about 1–2 tbsp garlic yogurt sauce and 1 tbsp ketchup sauce inside each. Place one cooked kebab log (or broken into strips) inside. Add a handful of shredded lettuce, 2–3 tbsp diced tomatoes, a few pickled cucumber slices and some thin red onion. If desired, tuck in a handful of hot fries for the authentic German Dener Kebab finish. Drizzle additional sauces on top to taste (extra yogurt sauce and ketchup sauce). Fold or wrap, secure with parchment if needed.
