Fries
Wash and peel (optional) the potatoes. Cut each potato into 1/4–1/2-inch sticks for classic fries. Aim for uniform size so they cook evenly.
Place cut fries in a large bowl of cold water and soak at least 30 minutes (or refrigerate and soak up to 2 hours). This removes excess starch and yields crisper fries.
After soaking, drain the potatoes and spread them on clean kitchen towels or paper towels. Pat thoroughly dry.
Heat oil in a deep pot or fryer to 325°F (163°C). Use a thermometer to monitor temperature. Fry the dried potatoes in batches for 3–4 minutes per batch until they are just cooked through but not browned (blanching). Remove with a slotted spoon and drain on a wire rack or paper towels.
Once all batches are blanched, increase oil temperature to 375°F (190°C). Fry the blanched fries in batches 2–3 minutes or until golden brown and crisp. Drain on a wire rack or paper towels. Immediately sprinkle the fine sea salt over the hot fries.
Flaming Seasoning
While fries are blanching, combine smoked paprika, ground cayenne, chipotle powder, ground black pepper, garlic powder, onion powder, brown sugar, ground cumin, and kosher salt in a small bowl. Whisk to break up any clumps and make a uniform powder.
Taste a pinch of the seasoning (careful — cayenne is spicy). Adjust the heat by reducing cayenne or chipotle if needed, or increase brown sugar for a touch more balance.
Finishing & Serving
Place the hot, drained fries into a large mixing bowl while still steaming-hot so the seasoning will cling.
Drizzle the melted unsalted butter evenly over the fries and immediately sprinkle the flaming seasoning mix over them. Gently toss with tongs or two spatulas for 30–60 seconds to coat fries thoroughly and evenly.
Zest the lime directly over the fries, then squeeze the lime juice lightly over them to brighten the flavors. Toss once more to distribute.
Garnish with chopped fresh cilantro. Transfer to a serving platter or paper cone and serve immediately with spicy aioli or your preferred dip.
If you want an extra 'flame' presentation: in a heatproof metal ladle, warm 1–2 tablespoons of high-proof liquor (e.g., 151 rum) away from the fries, ignite briefly and pour over the seasoned fries from a safe distance. Only perform this if experienced with flambé; it is optional and not necessary for flavor. Exercise extreme caution (keep hair, clothing, and face away; have a fire extinguisher nearby).
