Doner Quesadilla

Prepare filling

If doner meat is refrigerated, warm it gently in a skillet over medium heat for 2–3 minutes until just heated through. Season with 1/8 tsp black pepper and 1/8–1/4 tsp salt if needed. Remove from heat.

Assemble quesadilla

Lay one flour tortilla flat. Spread half (about 1 1/2 tbsp) of the doner sauce over the tortilla, leaving a 1/2 inch border. Evenly distribute half the shredded cheddar and half the shredded mozzarella over the sauce. Scatter half the warmed doner meat and half the sliced red onion over the cheese. Sprinkle half the chopped parsley. Top with the second tortilla or fold the tortilla over if using one large tortilla.

Cook quesadilla

Heat a large nonstick skillet or griddle over medium heat and add 1/2 tbsp olive oil or butter, swirling to coat. Place the assembled quesadilla in the skillet. Cook 2–3 minutes until underside is golden brown and cheese begins to melt. Carefully flip (use a spatula and, if needed, slide onto a plate then invert back into pan) and cook another 2–3 minutes until second side is golden and cheese is fully melted. Reduce heat slightly if tortilla browns too quickly.

Finish and slice

Transfer quesadilla to a cutting board. Let rest 1 minute, then cut into 4 wedges. Repeat assembly and cooking steps for the second quesadilla using remaining ingredients (or make both in same pan if space and timing permit).

Plate

Arrange quesadilla wedges on the plate alongside fries. Serve with extra doner sauce and pickles on the side. Provide a soft drink to complete The Boss Box.

If using frozen fries: bake or air-fry according to package instructions, tossing with 2 tbsp oil and 1/2 tsp salt before baking if required. Typical oven method: preheat oven to 220°C (425°F), spread fries in a single layer on a baking sheet, bake 18–25 minutes turning once until golden and crisp.

If using fresh fries: preheat oven to 220°C (425°F) or heat oil for frying to 175°C (350°F). For oven: toss cut potatoes with 2 tbsp oil and 1/2 tsp salt, bake 30–35 minutes turning halfway. For frying: fry in batches 3–4 minutes until golden and crisp; drain on paper towels and sprinkle with salt immediately.

Warm extra doner sauce slightly if desired. Place pickles or pickled peppers on the side. Chill or serve the soft drink chilled.
