Meat (Doner-style)
Marinate the meat
Slice the lamb or beef very thinly (if not pre-sliced). In a large bowl combine yogurt, olive oil, minced garlic, smoked paprika, ground cumin, ground coriander, dried oregano, salt, black pepper and lemon juice. Add the meat and toss to coat thoroughly. Cover and refrigerate for at least 1 hour, preferably 4 hours or overnight for best flavor.
Cook the meat
Heat a large skillet or griddle over medium-high heat until hot. Add 1 tablespoon of oil. Working in batches to avoid crowding, add marinated meat in a single layer and spread evenly. Let sear without moving for 2 minutes, then stir and continue to cook until edges are browned and meat is cooked through, about 4–6 minutes per batch depending on thickness. Remove cooked meat to a plate and keep warm. Repeat with remaining meat.
Optional finishing
If you want the classic doner edge, after cooking in batches pile the cooked meat back into the hot pan and press it down, letting the bottom crisp for 2–3 minutes. Flip and crisp the other side briefly. Chop into bite-sized strips if needed.
Seasoned Basmati Rice
Rinse and prep rice
Rinse basmati rice under cold water until the water runs clear to remove excess starch. Drain in a fine sieve for 5–10 minutes.
Cook rice
In a medium pot heat 1 tablespoon vegetable oil over medium heat. Add the finely chopped onion and 1 clove minced garlic; sauté until translucent, 2–3 minutes. Add the rinsed rice and turmeric; stir to coat the grains for 1 minute. Add 2.5 cups water and 1 teaspoon salt, bring to a boil uncovered. Once boiling, reduce heat to low, cover tightly, and simmer 12–15 minutes until water is absorbed and rice is tender. Remove from heat and let rest covered for 5 minutes, then fluff with a fork.
Wrap & Assembly
Warm wraps
Heat a large dry skillet over medium heat. Warm each durum wrap 20–30 seconds per side until pliable and slightly toasted (or wrap in foil and heat in a 160°C/325°F oven for 5–7 minutes). Keep wrapped in a clean towel to stay warm and soft.
Assemble burritos
Lay a warm wrap flat. In the center, place about 1/2 cup seasoned basmati rice, 150–200 g cooked doner-style meat, a handful (~1/2 cup) shredded lettuce, 1/4 cup diced tomatoes, 2 tablespoons sliced onion, and 1/4 cup grated cheddar. Spoon 1–2 tablespoons garlic sauce and 1 tablespoon spicy red sauce over the filling (adjust to taste). Fold the bottom up over the filling, fold both sides in, and roll tightly to enclose. Repeat for remaining wraps.
Grill burritos
Brush a skillet or panini press with 1 teaspoon olive oil and heat to medium. Place assembled burritos seam-side down and press gently, cooking 1–2 minutes per side until the wrap is golden and sealed and cheese is slightly melted. If using an oven, place burritos seam-side down on a baking sheet and bake at 200°C/400°F for 8–10 minutes to crisp.
