Prepare and cook fries

Preheat oven to 220°C (425°F) if using frozen fries or fresh-cut. Spread fries in a single layer on a baking tray, drizzle 1 tbs oil (if fresh-cut) and sprinkle 1 tsp salt and 1/2 tsp black pepper. Bake or air-fry according to package or until golden and crisp (20–30 minutes for fresh-cut; follow frozen instructions). Turn halfway for even browning.

Reheat and season doner meat

While fries cook, heat 1 tbs vegetable oil in a large skillet over medium-high heat. Add minced garlic (optional) and sauté 30 seconds until fragrant. Add the thinly sliced doner meat in a single layer (work in batches if needed). Stir and sear 3–5 minutes until hot and edges are slightly crisp. Taste and season lightly with salt and pepper if needed. Keep warm on low heat.

Assemble boxes

When fries are done, place a generous portion of fries into each serving box or plate. Top with a portion of hot doner meat (approx. 125 g per serving if serving 4). Spoon hot cheese sauce over the meat and fries while sauce is still warm. Scatter sliced pickled jalapeños over the top and finish with chopped parsley if using. Serve immediately with garlic mayo, hot sauce and lemon wedges on the side.

Make a roux

In a medium saucepan over medium heat, melt 2 tbs unsalted butter. Once foamy, add 2 tbs all-purpose flour and whisk continuously for 1–2 minutes until the raw flour smell cooks off and the mixture turns pale golden (do not brown).

Add milk and thicken

Gradually whisk in 350 ml whole milk in a slow, steady stream to avoid lumps. Continue whisking and bring the mixture to a gentle simmer over medium-low heat. Simmer for 2–3 minutes until the sauce thickens enough to coat the back of a spoon.

Enrich and melt cheeses

Lower heat to low. Whisk in 60 g softened cream cheese until smooth. Add 150 g grated sharp cheddar and 50 g shredded mozzarella a handful at a time, stirring until fully melted and the sauce is glossy and smooth. If the sauce becomes too thick, add 1–2 tbs milk to loosen to pouring consistency.

Season the sauce

Stir in 1 tsp mustard, 1/2 tsp smoked paprika, 1/4 tsp cayenne (optional), 1/2 tsp salt and 1/4 tsp black pepper. Taste and adjust seasoning. Keep sauce warm on the lowest heat, stirring occasionally to prevent skin from forming.

If using garlic mayo or yogurt sauce and hot sauce: portion into small bowls or squeeze bottles. Offer on the side for drizzling over the finished doner boxes. Serve with lemon wedges to brighten flavors.
