Doner meat
Season and warm doner
If using pre-sliced doner meat (lamb or chicken), toss the slices with 2 tbsp olive oil, minced garlic, 1 tsp ground cumin, 1 tsp smoked paprika, 1 tsp salt and 1/2 tsp black pepper. Let sit 10 minutes while preparing other elements. Heat a large skillet or griddle over medium-high heat until hot.
Add the seasoned doner meat in batches to the hot pan, spreading into a single layer. Cook, stirring occasionally, until edges are crisp and meat is heated through, about 3–5 minutes per batch. Remove to a warm plate and keep covered. Repeat for remaining meat.
Fries
Prep potatoes
Cut potatoes into 1/3" (8 mm) thick fries. Rinse thoroughly under cold water until water runs clear to remove excess starch, then dry completely with a clean towel. Optionally toss dried fries with 2 tsp cornstarch for extra crispness.
Fry (double-fry method)
Heat vegetable oil in a deep fryer or heavy pot to 320°F (160°C). Fry potatoes in batches for 4–6 minutes until soft but not browned. Remove to a tray and let cool 5–10 minutes. Increase oil temperature to 375°F (190°C) and fry batches again until golden and crisp, about 2–3 minutes. Drain on paper towels and immediately season with 1 tsp salt and 1/2 tsp black pepper.
If you prefer oven fries: toss cut potatoes with 2 tbsp oil, spread on a single layer on a lined sheet, roast at 225°C (440°F) for 25–35 minutes, turning once, until crisp and golden. Season same as above.
Salad & veg
In a bowl combine shredded lettuce, diced tomato, thinly sliced red onion, thinly sliced red cabbage and chopped parsley. Dress with 1 tbsp olive oil, 1 tbsp lemon juice and 1/2 tsp salt; toss gently to combine. Taste and adjust seasoning.
Sauces (three signature dips)
Garlic yogurt sauce
Whisk together 1 cup Greek yogurt, 1 minced garlic clove, 1 tsp lemon juice, 1 tsp olive oil, 1/4 tsp salt and 1/4 tsp black pepper. Chill until serving.
Spicy red pepper sauce
Mix 2 tbsp sriracha or harissa with 1/4 cup mayonnaise, 1 tsp lemon juice, 1/2 tsp smoked paprika and a pinch (1/8 tsp) salt. Adjust heat to taste; chill.
Creamy herb sauce
Whisk 2 tbsp tahini with 1/4 cup plain yogurt, 1 tsp olive oil, 1 tbsp lemon juice, 1/2 minced garlic clove, 1 tbsp chopped parsley and 1/8 tsp salt until smooth. If too thick, thin with 1–2 tsp water. Chill.
Finishing & assembly
For each Doner Box (makes 4 boxes): place a warmed flatbread or pita in the base of a shallow takeaway or serving box. Add a generous handful (about 150 g) of hot fries to one side, spoon 150 g warmed doner meat alongside, and add about 3/4 cup of the dressed salad. Place small containers or dollops of each sauce (about 2 tbsp each) in the box or provide ramekins.
Garnish with chopped parsley and a light sprinkle of sumac or chili flakes if desired. Serve immediately while fries and meat are hot and sauces chilled.
