Prepare filling
In a medium bowl, beat the softened cream cheese with a fork or spatula until smooth. Fold in grated sharp cheddar and grated mozzarella until evenly combined.
Stir in finely chopped pickled jalapeños, chopped cilantro, sliced green onions, garlic powder, smoked paprika, salt and black pepper. Taste and adjust seasoning or jalapeño amount to your preference.
Using a small cookie scoop or a tablespoon, portion the mixture into roughly 1-inch (25 mm) balls on a sheet of parchment. You should get about 20–24 bites depending on size. Place balls on a tray and freeze for 20–30 minutes until firm but not rock-solid; this helps them hold shape when coating and frying.

Set up dredging stations
Place flour (and optional cornmeal) in a shallow bowl. Season with a pinch of salt, the cayenne (if using) and the cornstarch. In a second shallow bowl, whisk the eggs with 2 tablespoons cold water until smooth. In a third shallow bowl, place the breadcrumbs (panko) evenly.
Working with chilled cheese balls, lightly dust each ball with flour (this helps the egg adhere). Dip into the beaten egg, letting excess drip off, then press into breadcrumbs to coat completely. For an extra-crisp double-coat, return each crumbed ball to the egg and breadcrumbs again. Place coated bites on a tray lined with parchment and keep refrigerated for 10 minutes while you heat the oil.
Heat oil and fry
Pour oil into a heavy-bottomed saucepan or deep fryer to a depth of about 1.5 inches (3–4 cm). Heat oil over medium heat to 350°F (175°C). If you don’t have a thermometer, test with a small piece of breadcrumb — it should sizzle and turn golden in about 30–45 seconds.
Fry the chilled, coated bites in batches of 6–8 (do not overcrowd) for 1.5–2.5 minutes per batch, turning gently so they brown evenly, until golden and crisp. If the cheese begins to ooze too quickly, lower the heat slightly. Use a slotted spoon to transfer fried bites to a paper towel-lined plate to drain. Let rest 2 minutes to firm up.
If you prefer baking: preheat oven to 425°F (220°C). Place coated bites on a parchment-lined sheet, spray lightly with oil, and bake 12–15 minutes, turning once, until golden and cheese is melted.
To Serve
Arrange chilli cheese bites on a serving platter. Garnish with fresh cilantro leaves and lime wedges. Serve with a cooling dip (ranch or sour cream mixed with a little lime juice and chopped cilantro) on the side for dipping.
Best served hot. Leftovers can be refrigerated in an airtight container for up to 2 days; re-crisp in a 375°F (190°C) oven for 6–8 minutes.
