Preparing the Catfish Fillets
Rinse the catfish fillets under cold water and pat them dry with paper towels.
Breading the Catfish
In a shallow bowl, mix cornmeal, flour, and Cajun seasoning. In another bowl, pour buttermilk. Dip each fillet in buttermilk, then dredge in the cornmeal mixture until well-coated.
Frying the Catfish
In a large heavy skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the coated catfish fillets. Fry for about 3-4 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.
Cooking Hush Puppies
Prepare hush puppies according to package instructions and fry them in the same oil until golden brown.
Serving
Serve the deep-fried catfish fillets with hush puppies, your choice of French fries or mashed potatoes, a side of garden-fresh salad, and tartar sauce.
