Prepare the glass
Run a lime wedge around the rim of a rocks or coupe glass. Pour the coarse salt onto a small plate, then press the moistened rim into the salt to coat evenly. Set the glass aside.
Combine ingredients
In a cocktail shaker, add 2 oz Olmeca Altos Plata tequila, 1 oz triple sec, 1 oz fresh lime juice, and 0.25 oz simple syrup (omit if you prefer a tarter cocktail).
Add ice and shake
Add enough ice to nearly fill the shaker (about 4 oz). Secure the lid and shake vigorously for 10–15 seconds, until the shaker is cold to the touch and properly diluted.
Strain and serve
Double-strain the cocktail into the prepared glass (over ice if desired) using a hawthorne or fine mesh strainer to catch ice shards and pulp.
Garnish
Garnish with the reserved lime wheel or wedge on the rim. Serve immediately.
