Prepare the Apples
Peel, core, and dice the Granny Smith apples into small pieces. Set aside.
Prepare the Bread
Cut the stale bread into cubes (about 1-inch pieces) and place them in a large mixing bowl.
Combine Ingredients
Pour the custard mixture over the bread cubes, making sure all pieces are soaked. Gently fold in the diced apples and half of the caramel sauce.
Add Cheese
Fold in the pecorino cheese into the bread mixture until evenly distributed.
Bake
Preheat the oven to 350°F (175°C). Grease a baking dish (9x13 inches) and pour the mixture into the dish. Bake for 45-50 minutes, or until the top is golden brown and a knife inserted in the center comes out clean.
Cool and Serve
Allow the bread pudding to cool for 10-15 minutes. Serve warm, drizzled with the remaining caramel sauce and a scoop of chamomile ice cream.
