In a large bowl, combine soy sauce, gochugaru, sesame oil, sugar, minced garlic, minced ginger, chopped green onions, and black pepper. Mix well to form a marinade. Add the thinly sliced pork shoulder to the marinade, ensuring all pieces are coated. Cover the bowl and refrigerate for at least 30 minutes or up to 2 hours for better flavor.
Heat a large skillet or grill pan over medium-high heat. Add the marinated pork in batches, avoiding overcrowding the pan. Cook for about 3-4 minutes per side until the pork is cooked through and slightly caramelized. Remove from heat.
Transfer the cooked pork to a serving platter. Garnish with toasted sesame seeds and additional chopped green onions if desired. Serve hot with rice or lettuce wraps.
