Marinated Spicy Baby Octopus with Onion
In a large bowl, combine gochugaru, soy sauce, sesame oil, minced garlic, minced ginger, sugar, salt, and black pepper. Mix well until the ingredients are well combined.
Add the cleaned baby octopus to the marinade and toss to coat evenly. Cover and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for better flavor.
While the octopus is marinating, slice the onion into thin rings. Heat a pan over medium heat and add a little sesame oil. Sauté the onion until they are translucent and slightly caramelized, about 5-7 minutes.
In the same pan, add the marinated baby octopus (reserve the marinade) and cook for about 5-6 minutes until the octopus is cooked through and tender. Pour in the reserved marinade and cook for an additional 2-3 minutes.
Garnish the dish with chopped green onions and toasted sesame seeds. Serve immediately with steamed rice or as a side dish.
