Radish Paper Preparation

1. Prepare the Radishes

Wash the radishes thoroughly and trim the tops and tails. Use a mandoline slicer to slice the radishes into thin rounds, about 1-2 mm thick.

2. Brine the Radish Slices

In a mixing bowl, combine water and salt, stirring until the salt is dissolved. Add the radish slices to the brine and let them soak for at least 30 minutes.

3. Drain and Dry

After soaking, drain the radish slices in a colander and gently pat them dry with a clean kitchen towel.

4. Marinate the Radish Paper

In a separate bowl, mix the rice vinegar and sesame oil. Add the radish slices to the marinade and let them sit for another 15 minutes to absorb the flavors.

5. Assemble the Radish Paper

Lay out the marinated radish slices on a clean surface. If using optional fillings, place a small amount in the center of each radish slice. Carefully fold or roll the radish slices around the fillings to create the 'paper'.

6. Serve

Arrange the radish papers on a serving platter and serve immediately. Enjoy your fresh radish paper as a light appetizer or snack!
