Marinate the Pork Belly
In a large bowl, combine soy sauce, brown sugar, minced garlic, minced ginger, sesame oil, and black pepper. Mix well to create a marinade.
Prepare the Pork
Cut the pork belly into bite-sized pieces and add them to the marinade. Ensure the pork is fully coated. Cover and refrigerate for at least 2 hours, preferably overnight.
Cook the Pork Belly
Preheat a grill or pan over medium-high heat. Remove the pork belly from the marinade and grill or sear until crispy and cooked through, about 5-7 minutes per side.
Serve
Once cooked, remove from the grill and let it rest for a few minutes. Serve with chopped green onions, sesame seeds, and lettuce leaves for wrapping.
