In a bowl, mix soy sauce, honey, minced garlic, grated ginger, sesame oil, and black pepper to create the marinade.
Place the beef belly in a large dish and pour the marinade over it. Ensure the beef is well-coated. Cover and refrigerate for at least 2 hours, preferably overnight.
Preheat your oven to 160°C (320°F).
Place the marinated beef belly in a baking dish and cover it with aluminum foil. Bake in the preheated oven for about 2.5 to 3 hours, or until the meat is tender.
Remove the foil for the last 30 minutes of cooking to allow the beef to caramelize. Baste occasionally with the leftover marinade.
Once cooked, remove from the oven, let it rest for 10 minutes, then slice and serve. Garnish with chopped spring onions and toasted sesame seeds.
