Preparation and Cooking
Prepare the Marinade
In a mixing bowl, combine soy sauce, brown sugar, pineapple juice, minced garlic, grated ginger, and black pepper. Mix well until sugar is dissolved.
Marinate the Pork Belly
Place the pork belly in a large zip-top bag or a shallow dish. Pour the marinade over the pork, ensuring it's well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.
Cook the Pork Belly
Preheat your grill or a skillet over medium-high heat. Remove the pork belly from the marinade, allowing excess marinade to drip off. Grill or pan-sear the pork belly for about 5-7 minutes on each side, or until nicely caramelized and cooked through.
Serve
Slice the pork belly, serve with grilled pineapple slices, and garnish with chopped green onions.
