Prepare the Marinade
In a large bowl, combine soy sauce, olive oil, Cajun seasoning, minced garlic, lemon juice, brown sugar, black pepper, and salt. Whisk until well blended.

Marinate the Pork Belly
Add the pork belly to the marinade, ensuring it is well coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight.

Cook the Pork Belly
Preheat a grill or stovetop pan over medium-high heat. Remove the pork belly from the marinade, allowing excess marinade to drip off. Grill for about 5-7 minutes on each side, or until the pork is cooked through and has a nice char.

Let the pork belly rest for a few minutes before slicing. Serve with your choice of sides and dipping sauces.
