Prepare the onion strings

Slice the onion into thin rings. Heat oil in a pan over medium heat. Fry the onion rings until they are golden brown and crispy. Remove from oil and drain on paper towels. Set aside.

Cook the bacon

In the same pan, cook the bacon slices until crispy. Remove and place on paper towels to drain excess fat.

Form and cook the burger patties

Divide the ground beef into two equal portions and form into 8oz patties. Season both sides with salt and pepper. Grill or pan-fry the patties on medium-high heat for about 4-5 minutes on each side for medium doneness. In the last minute of cooking, place a slice of cheddar cheese on each patty to melt.

Assemble the burger

Toast the brioche buns lightly. On the bottom half of each bun, layer lettuce, the cooked burger patty with melted cheese, crispy bacon, onion strings, and a generous drizzle of BBQ sauce. Top with sliced tomato and the other half of the bun.

Serve immediately with your choice of sides.
