Prepare the Dough
In a large mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy. Add salt and flour gradually, mixing until a dough forms.
Knead the Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1 hour.
Shape the Pretzels
Preheat your oven to 450°F (232°C). Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope and twist it into a pretzel shape.
Prepare the Baking Soda Bath
In a large pot, bring 10 cups of water to a boil and add the baking soda. Carefully drop the shaped pretzels into the boiling water for about 30 seconds each, then remove and place on a baking sheet lined with parchment paper.
Egg Wash and Season
In a small bowl, whisk together the egg yolk and water. Brush the pretzels with the egg wash and sprinkle with coarse sea salt.
Serve
Let the pretzels cool slightly before serving. Enjoy them warm with your favorite dipping sauce!
