1. Prepare the Cream Mixture

In a saucepan, combine the heavy cream, whole milk, and chai tea bags. Heat over medium heat until just below boiling. Remove from heat and let steep for 10 minutes.

2. Mix Egg Yolks and Sugar

In a mixing bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and thick.

3. Combine Mixtures

Remove the chai tea bags from the cream mixture. Gradually whisk the warm cream into the egg yolk mixture until combined. Then stir in the vanilla extract, ground cinnamon, ground ginger, and ground cardamom.

4. Bake the Crème Brûlée

Preheat your oven to 325°F (160°C). Pour the mixture into ramekins and place them in a baking dish. Fill the baking dish with hot water to create a water bath. Bake for 30-35 minutes, or until the edges are set but the center still jiggles slightly.

5. Chill

Remove from the oven and let the ramekins cool to room temperature. Then refrigerate for at least 2 hours or overnight.

6. Caramelize the Sugar

Before serving, sprinkle a thin layer of brown sugar on top of each crème brûlée. Use a kitchen torch to caramelize the sugar until it forms a crispy layer.
