Prepare fresh juices
If not using pre-made juices, blend about 1 cup of seeded watermelon and strain through a fine mesh sieve to yield 1 oz fresh watermelon juice. Juice a pink grapefruit and strain to obtain 0.5 oz fresh pink grapefruit juice. Measure and set aside.
Build and chill
Add The Botanist Gin (2 oz), Briottet Prickly Pear Liqueur (0.75 oz), fresh watermelon juice (1 oz), fresh pink grapefruit juice (0.5 oz), fresh lime juice (0.25 oz), and simple syrup (0.25 oz, optional) into a cocktail shaker. Fill the shaker with ice (about 1 cup).
Shake
Shake vigorously for 12–15 seconds until the outside of the shaker is cold and the mixture is well chilled and slightly diluted.
Garnish & Finish
Skewer a small watermelon wedge or a watermelon ball and rest it on the rim. Float a thin pink grapefruit wheel on top or set on the rim. Add a mint sprig for aroma if desired. Serve immediately.
