Prepare and Shake

Chill a coupe or large wine glass in the freezer or fill with ice water while you mix. In a cocktail shaker, add 2 tablespoons Everleaf Marine, 2 tablespoons passion fruit purée, 0.75 oz fresh lime juice, 0.25 oz fresh lemon juice and 0.5 tsp simple syrup. Fill the shaker with ice (about 1 cup). Secure the lid and shake vigorously for 12–15 seconds until the outside of the shaker is well chilled and slightly frosted.

Strain

Discard the chilling ice/water from the serving glass if used. Double-strain the shaken mixture into the chilled coupe or a champagne flute using a Hawthorne strainer and a fine mesh strainer to remove pulp and large ice chips, leaving a clear, slightly frothy base.

Top / Garnish

Add Sparkling Rosé

Carefully top the strained cocktail with 3 oz chilled Kisume sparkling rosé. Pour slowly down the side of the glass to retain some effervescence and a light foam on top.

Garnish & Serve

Spoon the passion fruit seeds (from 1/2 a fruit) gently onto the foam or float a thin slice of passion fruit. Optionally, rest a lime wheel on the rim. Serve immediately while sparkling is lively.
