Juice lemons

Use fresh lemons and a citrus juicer to extract 1.5 cups of lemon juice (about 6–8 medium lemons). Strain through a fine mesh if you prefer a pulp-free lemonade.

Dissolve sugar

In a pitcher, combine the lemon juice, 3 tablespoons granulated sugar, and 1.5 cups of the mixing water (warm water speeds dissolution). Stir vigorously until the sugar is fully dissolved. Taste and add more sugar if desired.

Adjust volume

Add the remaining 2 cups cold water to the pitcher to reach a balanced, lightly concentrated lemonade base. Stir to combine and chill while preparing the puree.

Mango Coconut Puree

Prepare mango

Place 1.5 cups chopped ripe mango flesh into a blender. Add 1/2 cup light coconut milk to give a silky coconut note and help pureé the mango smoothly.

Blend

Blend on high until completely smooth, about 30–60 seconds. If the mango is very thick or the blender struggles, add 1–2 tablespoons of the chilled lemonade base (not sparkling) or water to help the blade move.

Sweetness check

Taste the mango-coconut purée. If it needs additional sweetness, stir in up to 2 tablespoons simple syrup (or more to taste). Note that final dilution with sparkling water will mellow sweetness slightly.

Strain (optional)

For a silky, pulp-free drink, press the purée through a fine mesh sieve into a bowl using the back of a spoon. Otherwise, keep it unstrained for body and texture.

Combine components

In the chilled lemonade pitcher, whisk or stir in the mango-coconut purée until fully incorporated. Use all of the purée for an intense tropical flavor. Taste and adjust: add up to 2 tablespoons simple syrup for more sweetness or a splash more coconut milk for creaminess.

Add ice and sparkling water

Fill serving glasses with ice (about 1/2 cup ice per 8 oz glass). To serve a lightly effervescent Tropical Lemonade, measure out sparkling water and pour 1 part sparkling water to each 3 parts of the lemonade mixture. For the recipe quantities, stir in 1 cup chilled sparkling water into the pitcher just before serving to preserve carbonation.

Garnish and serve

Pour the lemonade over ice in individual glasses. Garnish each glass with a lemon slice, a mango slice, and a small sprig of fresh mint. Optionally slap the mint between your palms before garnishing to release aromatics.

Storage

Store any unused non-sparkling lemonade base mixed with mango-coconut purée in a sealed container in the refrigerator for up to 48 hours. Add sparkling water only at serving time.
