Measure and combine
Add 2 oz Everleaf Mountain, 0.75 oz falernum, 1 oz fresh pineapple juice, 0.75 oz guava puree, 0.5 oz passion fruit puree, 0.5 oz fresh lime juice, 0.5 oz fresh grapefruit juice and 0.25 oz simple syrup to a cocktail shaker.
Add bitters (optional)
If using, add 1 dash Angostura bitters to the shaker to add aromatic depth — especially helpful if your fruit purées are very sweet.
Ice and shake
Fill the shaker with ice (about 1 cup) and shake vigorously for 12–18 seconds, until the outside of the shaker feels very cold and the mixture is well chilled and slightly diluted.
Strain
Fine‑strain the cocktail into a chilled Collins glass or highball glass filled with fresh ice. Use a fine mesh strainer in addition to the shaker strainer if you used pulp to remove seeds and fiber.
Garnish & Finish
Float or set a pineapple wedge on the rim and spoon a little passion fruit pulp into the top of the drink or place the halved passion fruit on the surface for visual appeal.
Add a sprig of mint for aroma if desired. Serve with a short stirring straw so the drink can be mixed as it mellows.
