Build & Shake

Chill a highball or Collins glass by filling with ice and set aside. In a cocktail shaker add 2 oz Cygnet Infinity, 1 oz lychee cordial, 0.5 oz fresh lime juice and 0.25 oz simple syrup (omit syrup if your lychee cordial is very sweet). Fill the shaker with ice, secure the lid and shake vigorously for 10–12 seconds until well chilled.

Discard the ice from the chilled serving glass and add fresh ice to fill about two-thirds. Double-strain the shaken mixture into the prepared glass to remove small ice shards. Top with approximately 3 oz Double Dutch Soda Water (or preferred soda) and gently stir once with a bar spoon to integrate without flattening the bubbles.

Garnish

Skewer one pitted lychee on a cocktail pick and place across the rim or drop it into the drink. Add a thin lime wheel or twist on the rim and optionally float an edible flower on top for a delicate presentation. Serve immediately.
