Prepare shaker

Fill a cocktail shaker halfway with fresh ice.

Combine ingredients

Add Hennessy VS, Bacardi Spiced, Wray & Nephew, falernum, fresh pineapple juice, fresh lime juice, orange juice, simple syrup and 2 dashes of Angostura bitters into the shaker.

Shake

Shake vigorously for 12–15 seconds until the outside of the shaker is very cold and slightly frosted, proper dilution will occur from the ice.

Prepare glass

Fill a large Tiki mug or tall Collins glass 3/4 full with crushed ice.

Strain

Double-strain the shaken mixture over the crushed ice (use a Hawthorne and fine mesh strainer) so the drink sits well in the crushed ice and is free of pulp.

Float (optional)

If desired, carefully float an extra 1/4 oz Wray & Nephew over the top by pouring over the back of a bar spoon for a spicy overproof aroma and show.

Garnish & Finish

Garnish the drink with a sprig of mint and a dehydrated pineapple wheel or fresh wedge stuck into the ice. Lightly grate nutmeg over the top if using (a little goes a long way).

Serve with a short straw and present immediately so the crushed ice and aromatics remain fresh.
