Spicy Garlic Edamame

Method

Spicy Garlic Edamame

Bring a medium pot of salted water to a boil. Add the frozen edamame and cook for 3–4 minutes until heated through. Drain and set aside.

Heat a skillet over medium heat and add 1 tablespoon olive oil. Add the minced garlic and red pepper flakes and sauté 30–45 seconds until fragrant but not browned.

Add the drained edamame to the skillet, toss to coat. Stir in soy sauce, toasted sesame oil, lime juice, and coarse sea salt. Cook 1–2 minutes more to let flavors meld.

Transfer to a serving bowl, sprinkle with toasted sesame seeds and a squeeze of lemon if desired. Keep warm until serving.

Crispy Parmesan Potato Wedges

Preheat the oven to 220°C (425°F). Line a baking sheet with parchment paper and lightly oil.

Wash and scrub the potatoes. Cut each potato into 6–8 wedges (aim for roughly 4 cups by volume). Pat dry with paper towels to remove surface moisture.

In a large bowl, toss potato wedges with 2 tablespoons olive oil, garlic powder, smoked paprika, salt, and black pepper until evenly coated.

Arrange wedges in a single layer on the prepared baking sheet, cut-side down. Roast for 25 minutes, then flip and continue roasting 10–15 minutes more until golden and crisp at the edges.

In the last 3 minutes of roasting, sprinkle grated Parmesan over the wedges and return to the oven just long enough for the cheese to melt and lightly brown.

Remove from oven, toss gently with chopped parsley, adjust seasoning, and transfer to serving platter.

Tangy Beer Cheese Dip

In a small bowl, mix cornstarch with 1 teaspoon cold water to make a slurry; set aside.

In a small saucepan over low heat, combine the cream cheese and beer. Stir constantly until the cream cheese softens and mixture is smooth (about 2–3 minutes).

Add shredded cheddar, Dijon mustard, Worcestershire sauce, garlic powder, and black pepper. Keep stirring over low heat until cheese melts and mixture is smooth.

Whisk in the cornstarch slurry and cook another 1–2 minutes to thicken. If too thick, add up to 1 tablespoon more beer or water to reach desired dip consistency.

Taste and adjust seasoning. Transfer to a warmed ramekin or small bowl for serving alongside the potato wedges.

Pickled Onion & Cucumber Slaw

In a bowl combine apple cider vinegar, sugar, salt, and olive oil. Whisk until sugar and salt dissolve.

Add the thinly sliced red onion and cucumber ribbons. Toss to coat and let sit at room temperature for at least 10 minutes (or refrigerate for up to 1 hour) to quick-pickle.

Just before serving, drain any excess liquid and give the slaw a final toss. Spoon a small amount onto the potato wedges or serve on the side for brightness.

Assembly & Serving

Arrange the Crispy Parmesan Potato Wedges on a large platter. Place the Tangy Beer Cheese Dip in a bowl in the center. Scatter the Spicy Garlic Edamame in a separate bowl or alongside.

Top some wedges with a small spoonful of Pickled Onion & Cucumber Slaw for contrast, or serve the slaw on the side. Garnish edamame with extra sesame seeds and lemon wedges on the platter.
