Prep & Boil Eggs

Prepare eggs

Place 2 large eggs in a small saucepan and cover with cold water by 1 inch. Bring to a boil over medium-high heat. Once boiling, reduce heat to maintain a gentle boil and cook for 9 minutes for firm yolks. Remove eggs and transfer to an ice bath for 5 minutes, then peel and set aside.

Make Broth & Cook Potatoes

Bring seasoned boil to a simmer

In a large stockpot (at least 6 quarts), add 4 liters of water and bring to a rolling boil over high heat. Add 4 tablespoons seafood boil seasoning, 1 tablespoon kosher salt, 1 tablespoon whole black peppercorns, and 2 bay leaves. Squeeze half the lemon into the pot and drop the rind in. Stir and let the liquid return to a boil.

Cook potatoes

Carefully add 6 whole red potatoes to the seasoned boiling water. Reduce heat to maintain a steady boil and cook until potatoes are just tender when pierced with a knife, about 12–15 minutes depending on size. Continue to the next steps without draining.

Add Corn, Sausage, and Crab

Add corn and sausage

Add the 2 halved corn cobs and 2 halved sausages to the pot with the potatoes. Boil for 5 minutes to heat the sausage through and begin cooking the corn.

Add crab clusters

Carefully add 4 snow crab clusters (about 2 lb. total) to the pot. These are often precooked; simmer gently for 4–6 minutes until heated through. If using raw crab, simmer for 8–10 minutes until fully cooked. After the crab is heated, turn off the heat and let everything sit in the hot broth for 2 minutes to absorb seasoning.

Prepare Garlic Butter

Make garlic butter

While the seafood finishes, melt 6 tablespoons unsalted butter in a small saucepan over low heat or in a microwave-safe bowl. Add 4 minced garlic cloves, 2 tablespoons chopped parsley, 1/2 teaspoon smoked paprika, and 1/4 teaspoon red pepper flakes (optional). Warm gently for 1–2 minutes until fragrant but not browned. Keep warm.

Drain & Serve

Drain and plate

Using a large slotted spoon or strainer, transfer the potatoes, corn, sausage, and crab clusters to a large serving platter or a paper-lined table if doing a traditional boil presentation. Place peeled boiled eggs halved on the platter.

Finish & garnish

Drizzle the warm garlic butter over the crab and sausage, or serve the butter in small ramekins for dipping. Sprinkle remaining parsley over everything, squeeze the remaining lemon half over the seafood, and serve with lemon wedges. Provide melted butter (extra) at the table if desired.
