Prepare ginger

Peel and finely grate or thinly slice the 1-inch piece of fresh ginger. If you prefer a smoother, less fibrous ginger character, muddle the grated ginger in the shaker to extract juices; if you want a cleaner finish, place grated ginger in a fine mesh strainer and press to extract about 1/2 to 3/4 tsp of ginger juice.

Build the drink

In a cocktail shaker, add the extracted ginger (or the muddled grated ginger), 0.5 oz simple syrup, 0.75 oz fresh lime juice, 2 oz light rum, and 0.5 oz ginger liqueur if using. Add a handful of ice (about 1 cup) to the shaker.

Shake

Secure the shaker and shake vigorously for 10–15 seconds until well chilled and slightly frothy from the ginger.

Strain and top

Double-strain the mixture into a highball glass filled with fresh ice to remove ginger solids. Top with 2 oz club soda and gently stir once to combine.

Garnish and serve

Garnish with a lime wheel or wedge and an optional mint sprig. Serve immediately.

Notes

Adjust sweetness with more or less simple syrup to taste. For a nonalcoholic version, omit rum and ginger liqueur and increase club soda to 4 oz; add 1 oz additional simple syrup if desired.
