Meringue Shells
Prepare oven and piping
Preheat oven to 250°F (120°C). Line two baking sheets with parchment paper. Draw four 6-inch circles on the back of the paper as guides and flip the parchment so the ink is underneath.
Whisk egg whites: In a completely clean, dry mixing bowl, whisk the 4 egg whites with a pinch of salt until soft peaks form.
Add sugar gradually: With the mixer running on medium-high, add the 1 cup granulated sugar one tablespoon at a time, waiting a few seconds between additions so sugar dissolves. Continue whipping until the meringue is glossy and forms stiff, smooth peaks (about 5–7 minutes). Rub a little meringue between fingers to ensure no grittiness—if gritty, continue whipping.
Stabilize meringue: Gently fold in 1 teaspoon cornstarch, 1 teaspoon white wine vinegar (or lemon juice), and 1 teaspoon vanilla extract until incorporated.
Pipe or spoon shells: Transfer meringue to a piping bag fitted with a large round tip or use two spoons. Pipe or spoon four 6-inch discs onto prepared sheets, piling the center slightly higher to create a shallow well for fillings. Smooth edges with an offset spatula if needed.
Bake and cool: Bake at 250°F (120°C) for 1 hour 15 minutes to 1 hour 30 minutes. Turn the oven off and leave the meringues inside to cool completely for at least 1 hour (this prevents cracking). Once cool, store in an airtight container until assembly.
Vanilla Crème Anglaise
Infuse milk: In a small saucepan, combine 1 cup whole milk and 1 cup heavy cream. If using a vanilla bean, scrape seeds into the milk and add the pod. Heat over medium until mixture is hot and just beginning to steam (do not boil). Remove from heat and let steep 10 minutes (keep the pod in).
Whisk yolks and sugar: Meanwhile, whisk 4 egg yolks with 1 tablespoon granulated sugar and a pinch of salt in a bowl until pale and slightly thickened.
Temper and cook: Slowly pour about one-third of the hot milk mixture into the yolks while whisking constantly to temper. Then return the tempered yolk mixture to the saucepan with the remaining milk. Cook over low heat, stirring constantly with a wooden spoon or spatula, until the custard thickens slightly and coats the back of the spoon (170–175°F / 77–80°C). Do not boil.
Strain and chill: Strain the custard through a fine-mesh sieve into a clean bowl to remove the vanilla pod and any cooked bits. If you used vanilla paste, scrape in and stir. Chill the crème anglaise in the refrigerator, cover with plastic touching the surface to prevent skin from forming. Chill at least 1 hour before assembly.
Mascarpone Cream
Whip cream: In a chilled bowl, whip 1 cup heavy cream to soft peaks.
Blueberry Lavender Syrup
Cook berries: In a small saucepan combine 1 cup blueberries, 1 tablespoon sugar, 1 tablespoon water, and 1 teaspoon dried culinary lavender. Bring to a gentle simmer over medium heat and cook 5–7 minutes, crushing some berries with the back of a spoon to release juices.
Infuse and sweeten: Remove from heat, stir in 1 teaspoon lemon juice, and let steep 5 minutes to infuse the lavender. Taste and add up to 1 additional tablespoon sugar if you prefer sweeter syrup.
Strain and cool: Strain the mixture through a fine mesh sieve pressing to extract syrup; reserve solids if desired for garnish. Cool syrup to room temperature, then chill. The syrup will keep refrigerated for up to 4 days.
Assembly & Garnish
Prepare components: Have cooled meringue shells, chilled crème anglaise, mascarpone cream, chilled syrup, fresh blueberries, and mint ready.
Plate pavlovas: Place a meringue shell on each dessert plate. Spoon about 2–3 tablespoons of chilled vanilla crème anglaise into the center of each shell to create a thin base layer (this adds moisture and flavor).
Add mascarpone cream: Pipe or spoon about 3–4 tablespoons mascarpone cream into the well on top of the crème anglaise, forming a soft mound.
Top with berries and syrup: Scatter a quarter-cup fresh blueberries over the mascarpone. Drizzle 1–2 tablespoons blueberry lavender syrup over the berries and around the plate. If you reserved cooked blueberry solids, add a small spoonful on top for texture.
Garnish and finish: Dust lightly with powdered sugar and tuck 3 mint leaves beside each pavlova. Serve immediately so the meringue stays crisp. If you must hold briefly, assemble just before serving; unassembled components can be refrigerated: meringues up to 1 day, creams up to 2 days, syrup up to 4 days.
