Form and cook sausage patty
Combine ground pork, 1/2 tsp salt and 1/4 tsp black pepper in a bowl. Form into a single patty about 3.5–4 inches in diameter and 1/2 inch thick. Heat a nonstick skillet over medium heat and cook the patty 4–5 minutes per side until internal temperature reaches 160°F (71°C). Transfer to a plate and keep warm.
Latke
Prepare potato mixture
After grating the potato and onion, place them in a clean kitchen towel and squeeze out as much liquid as possible (important for a crisp latke). Transfer solids to a bowl and whisk in 1 egg, 2 tablespoons flour and 1/4 tsp salt until combined.
Fry latke
Heat 1/4 inch (about 1/4 cup) vegetable oil in a skillet over medium-high heat until shimmering. Spoon the potato mixture into the skillet and flatten to a 3–4 inch round (makes one medium latke). Fry until golden brown and crisp, 3–4 minutes per side. Transfer to paper towel to drain and season immediately with a pinch of salt. Keep warm.
Denver Omelette-Soufflé
Sauté vegetables
In a small nonstick skillet, melt 1 teaspoon of the unsalted butter over medium heat. Add the diced red and green bell peppers and diced onion. Sauté until softened and slightly caramelized, about 3–4 minutes. Season vegetables lightly with a pinch of salt and remove from pan to a bowl.
Make omelette-soufflé
In a bowl, whisk together 3 eggs, 2 tablespoons milk, 1/4 tsp salt and 1/8 tsp black pepper until frothy. Return the skillet to medium-low, melt the remaining butter, pour in the egg mixture, and let set for 30–45 seconds. Sprinkle the sautéed peppers and onions over the eggs. Using a spatula, gently lift edges to let uncooked egg run beneath. Cook until eggs are nearly set but still slightly soft on top (about 1–2 minutes). For a light soufflé effect, cover the skillet for 30 seconds to finish setting without overbrowning. Slide the omelette onto a plate.
Assembly & Toppings
Assemble Denver Roll
Spread 1 tablespoon of chili aioli on the bottom half of the toasted roll. Place the warm sausage patty on top of the aioli, then set the fried latke over the sausage. Add the Denver omelette-soufflé on top of the latke. Layer 2 slices of provolone over the omelette so the residual heat melts them slightly. Add the bacon pieces, a drizzle or additional 1 tablespoon chili aioli on the top half of the roll, then close the sandwich. Garnish with chopped parsley if desired.
Serve
Slice in half if desired and serve immediately while hot.
