Clarified Mango Salsa
Make the salsa
Peel and dice fresh ripe mango to yield about 1 cup diced. In a bowl, combine diced mango, red bell pepper, finely chopped red onion, minced jalapeño, chopped cilantro, 2 tablespoons fresh lime juice, and 1/2 teaspoon sea salt. Mix gently to combine and let sit 10 minutes to macerate.
Blend and strain
Transfer the macerated salsa to a blender and puree until smooth (about 30–45 seconds). Place a fine-mesh sieve lined with cheesecloth or a double layer of coffee filter over a bowl. Pour the puréed salsa into the sieve and let it drain by gravity for 30–45 minutes, pressing gently with the back of a spoon to collect as much liquid as possible. Reserve both the strained solids (optional for garnish) and the extracted juice (you should have ~4–6 oz). Chill the extracted juice until ready to clarify.
Mango Syrup
Combine 1/2 cup mango purée, 1/2 cup granulated sugar, and 1/4 cup water in a small saucepan over medium heat. Stir until the sugar dissolves and the mixture begins to simmer, about 3–4 minutes. Remove from heat and cool to room temperature, then refrigerate until cold. Store in an airtight container; this yields a thick syrup used to sweeten the cocktail (~6 oz syrup).
Clarification (Gelatin Clarified Juice)
Bloom 1 tsp unflavored gelatin in 2 tbsp cold water: sprinkle gelatin over the water, let sit 3–5 minutes until spongy. Warm the bloomed gelatin gently (either in the microwave for 5–8 seconds or in a small pan) until liquid and not boiling. Whisk the warm gelatin into the chilled mango-salsa juice until fully incorporated. Let the mixture sit at room temperature for 10–15 minutes to begin setting, then refrigerate until fully set (about 1–2 hours).
Once set, cut the gelatin block into chunks and transfer to a fine mesh strainer set over a bowl. Let it drain slowly at refrigerator temperature; the melted liquid will pass through while the gelatin traps suspended solids, producing clarified juice. This can take 2–4 hours; periodically press gently with a spoon to help release the clear liquid. Collect about 3–4 oz of clarified mango salsa liquid for cocktails. Keep refrigerated — clarified liquid is delicate and best used within 24–48 hours.
Cocktail Assembly
Prepare the glass: rub the rim of a rocks or coupe glass with a lime wedge and dip into coarse salt or Tajín. Chill the glass if desired.
Build the drink: in a cocktail shaker add 2 oz blanco tequila, 2 oz clarified mango salsa liquid, 0.75 oz mango syrup, and 0.75 oz fresh lime juice. Add ice (about 1 cup) to the shaker.
Garnish and serve: garnish with a lime wheel or thin mango slice. Serve immediately. Taste and adjust next rounds — increase syrup by 0.25 oz for additional sweetness or reduce clarified juice for a brighter tequila-forward profile.
