Prepare and bake sponge

Preheat oven to 350°F (175°C). Grease and line an 8- or 9-inch round cake pan. In a medium bowl whisk together flour, cocoa powder, baking powder, baking soda, and salt until homogenous. In a large bowl whisk eggs and granulated sugar until combined; add milk, oil, and vanilla and whisk until smooth. Add the dry ingredients to the wet and stir until just combined. Slowly pour in hot water or hot coffee while stirring to loosen the batter (batter will be thin). Pour batter into prepared pan and bake 25–30 minutes, or until a toothpick inserted near center comes out with a few moist crumbs. Cool in pan 10 minutes, then transfer to a rack to cool completely. Once cool, slice horizontally if you want layered portions, or cut into small rounds for plating.

Chocolate Mousse (vegetarian)

Melt chocolate

Place chopped dark chocolate in a heatproof bowl.

Heat 1/2 cup of the heavy cream in a small saucepan until it just begins to simmer. Pour the hot cream over the chopped chocolate and let sit 1 minute, then whisk until smooth. Add the tablespoon of butter, salt, and optional espresso; stir until incorporated. Set aside to cool slightly.

Prepare custard base

In a small saucepan, whisk together egg yolks and granulated sugar. Warm the remaining 1 cup heavy cream in a separate pan until just simmering. Slowly temper about 2 tablespoons of the hot cream into the yolk mixture while whisking, then slowly whisk the tempered yolks back into the remaining hot cream in the pan. Cook over low heat, stirring constantly, until mixture thickens slightly and coats the back of a spoon (do not boil). Remove from heat.

Pour a small amount of the warm custard into the melted chocolate and whisk to combine, then fold all custard into the chocolate mixture until smooth and glossy. Cover and chill until cool but not set, about 45–60 minutes.

Whip and fold

Whip the chilled remaining cream (if any left; note total cream was 1.5 cups, used 1 cup for custard and 0.5 for melting — adjust accordingly) to soft peaks. Fold one-third of whipped cream into chocolate base to lighten, then gently fold in remaining cream until fully combined and airy. Spoon or pipe mousse into a ring on each cake portion or into serving glasses. Chill at least 2 hours to set (can be made a day ahead).

Cherry Raspberry Sorbet

Make simple syrup

In a small saucepan combine water and granulated sugar. Heat over medium, stirring until sugar dissolves. Remove from heat and cool to room temperature.

In a blender or food processor combine cherries, raspberries, cooled simple syrup, lemon juice, and corn syrup (if using). Blend until completely smooth. Taste and adjust sweetness or acidity as needed. For an extra-silky texture, pass the purée through a fine-mesh sieve to remove seeds and solids.

Chill the purée thoroughly in the refrigerator (at least 1 hour). Process in an ice cream maker according to manufacturer’s instructions until it reaches a soft-sorbet consistency, then transfer to an airtight container and freeze until firm, about 2–4 hours. If you don’t have an ice cream maker, freeze in a shallow container and stir vigorously every 30 minutes until uniformly frozen to avoid large ice crystals (about 3–4 cycles).

Sesame Dentelle (crispy tuile)

Prepare batter and bake

Preheat oven to 350°F (175°C). Melt butter and let cool slightly. In a small bowl whisk together flour, powdered sugar, and salt. Add melted butter and oil and whisk until smooth and slightly runny. Stir in toasted sesame seeds. Line a baking sheet with a silicone mat or parchment paper. Drop teaspoon-sized dollops spaced well apart (they will spread) and use the back of a spoon to thin each to a very thin round. Bake 6–9 minutes, watching carefully: edges should be golden and centers set. Remove from oven.

Shape

Working quickly while tuiles are hot and pliable, slide spatula underneath and drape each over a rolling pin, bottle, or handle to form curved shapes (dentelle). Once cool they will crisp. If any spread too thick, return to oven a minute to crisp but be wary of burning. Make extras because they are delicate.

Assembly & Garnish

For plated dessert portioning (serves 6): Cut the cooled chocolate sponge into 6 equal small rounds or squares. Pipe or spoon a generous portion of chocolate mousse onto each cake piece or create a small ring of mousse next to the cake and fill it. Place a quenelle or scoop (about 2–3 tablespoons) of cherry raspberry sorbet alongside the cake and mousse.

Insert a sesame dentelle into the mousse or lean it against the cake for height and crunch. Scatter a few fresh berries and chocolate shavings over and around the plate. Garnish with a mint leaf if desired. Serve immediately so sorbet remains firm and dentelle stays crisp.

Note on timing: Sorbet should be frozen solid until just before plating. Mousse and cake can be assembled in advance; add dentelle and sorbet at service to maintain texture contrast.
