Sour Cocktail Base
Measure and combine
Add 2 oz bourbon, 0.75 oz fresh lemon juice, 0.75 oz simple syrup, and 1 whole large egg white into a cocktail shaker (no ice for the dry shake). Using fresh-squeezed lemon juice gives the best bright flavor.
Dry shake
Seal the shaker and shake vigorously for 15β20 seconds without ice. The dry shake emulsifies the egg white and incorporates air to create a rich, silky foam.
Wet shake
Open the shaker, add a generous handful of cubed ice (about 1 cup) and reseal. Shake again very hard for 10β15 seconds until the shaker exterior becomes frosty and the mixture is well chilled.
Strain
Double-strain the cocktail into a chilled coupe or rocks glass using a Hawthorne strainer and a fine mesh strainer to remove ice shards and produce a smooth texture.
Optional Flavor & Garnish
Add bitters and finish
If using Angostura bitters, drop 2β3 dashes onto the foam. Use a toothpick or cocktail pick to gently swirl the drops into a simple design (or leave as is).
Garnish
Twist a lemon peel over the drink to express oils, then rim the glass with the peel and drop it in (or add a lemon slice). Optionally add a maraschino cherry on a pick. Serve immediately.
