Method
Thyme Simple Syrup
Make syrup
Combine 1 cup water and 1 cup granulated sugar in a small saucepan and bring to a gentle simmer over medium heat, stirring until the sugar dissolves completely.
Infuse thyme
Add 5 fresh thyme sprigs to the saucepan, reduce heat to low, and simmer gently for 5 minutes to extract the herb aroma and flavor.
Cool and strain
Remove from heat and let the syrup steep for an additional 10 minutes. Strain out the thyme sprigs into a heatproof container, discard the used sprigs (or reserve for garnish if desired), and cool the syrup to room temperature. Refrigerate until chilled. Yields about 1 to 1 1/4 cups syrup.
Assemble Spritzer
Add flavor components
Pour 2 tablespoons chilled thyme simple syrup and 1 tablespoon fresh lemon juice over the ice. If making a cocktail, add 1.5 oz vodka or gin now.
Top with soda
Gently top with 6 oz club soda or sparkling water. Stir once or twice with a bar spoon to combine without flattening the bubbles.
Garnish and finish
Garnish with 1 fresh thyme sprig and a lemon wheel or twist. Optionally grate 1 tsp lemon zest over the top for extra aroma. Taste and adjust sweetness by adding another 1/2 to 1 tablespoon thyme syrup if desired.
Serve
Serve immediately while sparkling. Keeps best if syrup is chilled and soda is cold.
