Trim and score

Remove any large excess fat from the edges of the duck breasts but leave the skin intact. Pat the breasts dry with paper towels. Using a sharp knife, score the skin in a crosshatch pattern, cutting only through the skin and fat (not into the meat), making shallow 1/4-inch deep cuts spaced about 1/2 inch apart.

Season

Season both sides of each duck breast with kosher salt and freshly ground black pepper. Allow to rest at room temperature for 15–20 minutes while you prepare the grill and glaze. This also helps the meat cook more evenly.

Render skin and sear on grill

Preheat a gas or charcoal grill to medium (about 375–400°F / 190–200°C). Place the duck breasts skin-side down on the grill over indirect or medium heat. Cook skin-side down for 8–12 minutes until most of the fat has rendered and the skin is deep golden brown and crisp; press gently with a spatula occasionally for even contact. Tilt or move breasts to a drip pan area if flare-ups occur. Flip and sear meat-side for 2–4 minutes to develop color.

Check doneness

Use an instant-read thermometer inserted into the thickest part of the breast: 120°F (49°C) for rare, 125–130°F (52–54°C) for medium-rare, 135°F (57°C) for medium. Because duck breast benefits from being slightly pink, aim for 125–130°F if you prefer medium-rare. Cooking time will vary by thickness (typically total 12–16 minutes).

Rest

Transfer the duck breasts to a cutting board and tent loosely with foil. Let rest for 6–8 minutes. Resting redistributes juices and allows carryover cooking to finish.

Make glaze

While the duck rests (or while the grill preheats), whisk together soy sauce, honey, rice vinegar, grated ginger, minced garlic, sesame oil, and chili flakes in a small bowl until smooth. Taste and adjust: add a little more honey if you want sweeter, or a splash more vinegar for brightness.

Reduce (optional)

For a thicker glaze, pour the mixture into a small saucepan and simmer over low heat for 3–4 minutes, stirring, until slightly thickened. Remove from heat and keep warm. Alternatively, use the glaze as-is for brushing.

Glaze the duck

If you reduced the glaze or kept it whole, brush a thin layer on the meat-side of the rested duck breasts and return to the grill for 30–60 seconds per side over medium heat to set the glaze (optional). Do not overcook — just warm and caramelize the glaze slightly.

Finish with butter and herbs

After glazing (or immediately after resting if not glazing), place 1 tablespoon unsalted butter on top of each breast and let it melt; sprinkle with fresh thyme leaves if using to add aroma.

Slice and serve

Slice duck breasts thinly on a bias (about 1/4-inch thick slices). Arrange slices on a warm platter. Spoon any remaining glaze from the pan or bowl over the sliced duck. Serve with lemon wedges on the side to brighten the flavor.
