Herbal-Spice Infusion

Prepare and bruise aromatics
Peel and thinly slice the fresh ginger to yield about 2 tablespoons. Lightly bruise the thyme sprigs and sage leaves with the back of a spoon or by gently clapping leaves between your fingers to release oils.

Make the infusion
In a small saucepan combine 1 cup water, sliced ginger, bruised thyme sprigs, bruised sage leaves, 1 teaspoon ground turmeric, and a pinch of black pepper. Bring to a gentle simmer over medium heat, then reduce heat and let simmer very gently for 6 minutes. Do not boil vigorously — you want to extract flavor without bittering the herbs.

Sweeten and finish
Remove the pan from heat. Stir in 2 tablespoons honey (or simple syrup) and 1 tablespoon fresh lemon juice while warm so the sweetener dissolves completely. Taste and adjust: add another 1/2 tablespoon honey if you prefer sweeter. Let the infusion cool to room temperature (about 15–20 minutes) to avoid flattening the soda later.

Strain
Pour the cooled infusion through a fine-mesh sieve or cheesecloth into a bowl or measuring cup, pressing gently on solids to extract liquid. Discard solids and set the infused liquid aside. This yields a concentrated herbal-spice syrup approximately 3/4–1 cup; you will use about 3–4 tablespoons per serving (recipe scaled below).

Chill glassware and ice
If desired, chill glasses in the freezer for 5–10 minutes. Fill each serving glass with about 1/2 cup ice (for two servings shown here, use 1 cup ice per glass; recipe yields 2 servings).

Build the Electric Cooler
For each serving: add 2 tablespoons (30 ml) of the cooled herbal-spice infusion over the ice in the glass. Add 1 1/2 cups (360 ml) chilled soda (use plain club soda for a crisp result or lemon-lime soda for a sweeter, more citrusy drink). If you prefer a lighter flavor, replace up to 1/2 cup of the soda with extra soda water and adjust to taste. Stir gently once to combine.

Notes and scaling
This recipe as written makes approximately 2 servings (see servings field). The infusion keeps refrigerated in a sealed jar for up to 4 days; add 2–3 tablespoons infusion per 8–12 oz (240–360 ml) soda serving when ready to serve.
