Soften and combine

In a medium bowl, use a spatula to beat the softened cream cheese until smooth. Add the mayonnaise, Dijon mustard, apple cider vinegar, hot sauce, smoked paprika, kosher salt, and black pepper. Stir until fully combined and smooth.

Fold in cheeses and pimentos

Add the shredded sharp cheddar and shredded white cheddar/Monterey Jack to the bowl. Fold the cheeses gently into the mayo/cream cheese mixture until evenly coated. Fold in the drained diced pimentos until distributed consistently throughout the mixture.

Adjust seasoning and finish

Taste and adjust seasoning with additional salt, pepper, or hot sauce if desired. Stir in chopped chives if using. Transfer the pimento cheese to a small serving bowl, cover, and chill for at least 20 minutes to allow flavors to meld (or up to 24 hours).

Bread & Crackers

Preheat the oven to 400°F (200°C). Arrange baguette slices on a baking sheet in a single layer. Brush both sides lightly with the extra-virgin olive oil.

Toast the baguette slices in the preheated oven for 6–8 minutes, flipping halfway, until golden and crisp at the edges. Remove and let cool slightly.

Arrange the everything crackers on the serving board near where the pimento cheese will be placed.

Cured Meats & Pickles

If prosciutto slices are wide, fold or roll each slice into loose ribbons or rosettes for an attractive presentation. Place prosciutto on the board near the crackers and toasted bread.

Arrange the dill pickles (cornichons) in a small cluster or in a ramekin on the board so guests can easily grab them.

Assembly & Serving

Place the chilled bowl of pimento cheese on the center or an edge of a large serving board or platter.

Surround the pimento cheese with prosciutto ribbons, toasted baguette slices, everything crackers, and dill pickles. Leave small gaps so each item is easy to pick up.

Add optional accents: a small dish of whole grain mustard, a drizzle of honey over a few prosciutto slices (or in a small dish), and sprinkle fresh herbs or extra chives over the pimento cheese for color.

Serve immediately at room temperature. If chilled, allow the pimento cheese to sit 10–15 minutes before serving so it softens slightly and spreads easily.
