Mushroom mousse base
Prepare gelatin
Sprinkle gelatin over cold water in a small bowl and let bloom for 5 minutes while you cook the mushrooms.
Sauté mushrooms
Clean and roughly chop mushrooms. Heat a large skillet over medium-high heat with butter and olive oil. When hot, add mushrooms in a single layer (work in batches if necessary) and cook without stirring for 2 minutes to brown, then stir and cook until deeply browned and any liquid has evaporated, about 6–8 minutes total. Add minced shallot and garlic and cook 1–2 minutes until fragrant.
Deglaze
Add the white wine (or vermouth) and cook until most of the liquid has evaporated, about 1–2 minutes, scraping up browned bits. If using, add the tablespoon of stock for extra depth.
Simmer with cream
Pour in the heavy cream, bring to a gentle simmer, and cook 3–4 minutes until the mixture is slightly reduced and thickened. Remove from heat and stir in chopped thyme, lemon juice, salt, and pepper.
Incorporate gelatin and cream cheese
Warm the bloomed gelatin briefly in the microwave (5–8 seconds) or over a double boiler until it liquefies. Stir the softened cream cheese into the warm mushroom-cream mixture until smooth, then whisk in the melted gelatin until fully combined and uniform.
Blend to mousse
Transfer the mixture to a blender or food processor and blend on high until completely smooth and airy, about 45–60 seconds. Taste and adjust seasoning. If the mixture is too warm, let it cool slightly before the next step.
Chill
Pass the mousse through a fine-mesh sieve for extra silkiness (optional), then spoon or pipe the mousse into small serving glasses, ramekins, or a terrine. Cover and refrigerate at least 3 hours, or until set (4–6 hours for firmer texture).

While the mousse chills, combine parsley, basil, extra-virgin olive oil, lemon juice, salt, and pepper in a blender or small food processor. Blend until very smooth and bright green, about 30–45 seconds. If the oil is too thick, add 1–2 teaspoons additional olive oil. Pass through a fine sieve for a silky oil if desired.
Chill oil
Transfer the herb oil to a squeeze bottle or small bowl and chill briefly so flavors meld, 15–30 minutes.
