Prep
Wash and dry greens
Rinse mixed baby greens and romaine under cold water. Spin or pat dry thoroughly. Place in a large salad bowl and chill briefly while you prepare other ingredients.
Prep vegetables and fruit
Thinly slice cucumber, halve cherry tomatoes, slice radishes, remove corn kernels from the cob (if using fresh), thinly slice peach or nectarine (if using), and dice avocado. Thinly slice the shallot and tear the basil leaves. Chop the mint finely.
Dressing
Make the dressing: in a small bowl or jar combine 4 tbsp extra-virgin olive oil, 2 tbsp fresh lemon juice, 1 tbsp white wine vinegar, 1 tsp Dijon mustard, 1 tsp honey, 1 tsp salt, and 1/2 tsp freshly ground black pepper. Whisk vigorously or shake in a jar until emulsified and slightly thickened. Taste and adjust acidity or seasoning (add another 1/2 tsp honey if too tart, or a pinch more salt).
Assembly
Add herbs and fruit: Scatter torn basil and chopped mint over the salad. Add peach or nectarine slices if using, and gently fold in so the fruit remains intact.
Dress the salad: Drizzle about two-thirds of the dressing over the salad (reserve the rest to adjust later). Using salad tongs or two large spoons, gently toss the salad until everything is lightly coated. Taste and add remaining dressing if needed.
Finish and serve: Fold in diced avocado just before serving to prevent browning. Sprinkle crumbled feta or goat cheese and toasted almonds or sunflower seeds over the top. Finish with a few pinches of flaky sea salt and a light grating of lemon zest, if desired.
Serve immediately on chilled plates to keep the greens crisp.
