Method
Citrus & Burrata
Prepare mandarins
Peel 3 mandarins, remove as much pith as possible and segment them (supremes) over a bowl to catch juices. Reserve any juice for dressing.
Gently tear the burrata into large pieces on a serving platter or divide into 2–4 small plates, keeping the creamy center intact where possible.
Drizzle 2 tablespoons extra-virgin olive oil and 1 teaspoon aged balsamic vinegar over the burrata and mandarin segments. Scatter 1 teaspoon freshly ground black pepper and 1 teaspoon sea salt evenly.
Crunch & Toast
Preheat oven to 400°F (200°C). Arrange 8 slices of rustic bread on a baking sheet. Brush each slice lightly with 1 teaspoon olive oil and spread a thin layer of the room-temperature butter on top.
While warm, rub the toasted slices with a lemon zest to impart brightness. Chop 1 tablespoon toasted almonds and sprinkle across the toasts.
Scatter 1 teaspoon toasted sesame seeds and 2 tablespoons crispy fried shallots over the toasts to build additional crunch and savory notes.
Assembly & Finish
Place the prepared crunchy toasts around or alongside the burrata and mandarin platter. Spoon additional mandarin segments and any collected citrus juices onto the toasts as desired.
Scatter torn basil leaves (8 leaves) and 1 tablespoon chopped mint over the burrata and mandarins. Drizzle 1 teaspoon honey over the whole dish for a subtle sweetness.
Finish with a pinch (about 1/2 teaspoon) flaky sea salt and an extra small grind of black pepper to taste. If you like, add a final tiny drizzle (optional) of extra-virgin olive oil.
Serve immediately so the toasts remain crisp and the burrata is cool and creamy. Encourage guests to spoon burrata and mandarins onto a piece of toast and enjoy the contrast of cream, citrus, and crunch.
