Make dough

In a large mixing bowl or stand mixer fitted with a dough hook, combine warm water, sugar and yeast. Let sit 5 minutes until foamy. Add melted butter, salt and 2 cups of flour; mix until combined. Gradually add remaining flour 1/2 cup at a time until a soft, slightly tacky dough forms (about 3 1/2–4 cups total). Knead by machine 5–7 minutes or by hand 8–10 minutes until smooth and elastic.

First rise

Lightly oil a bowl, place the dough inside, cover with plastic wrap or a damp towel and let rise in a warm place until doubled, about 45–60 minutes.

Portion dough

Punch down dough and divide into 8 equal portions (~3.5–4 oz each). Roll each portion briefly into a ball and cover to keep from drying while you prepare filling.

Boil pretzels

Preheat oven to 425°F (220°C). Bring a wide, shallow pot of water to a gentle boil and stir in baking soda. Prepare a rimmed baking sheet lined with parchment. Whisk egg with 1 tbsp water to make egg wash. Roll each dough ball into a 6–7 inch log, then flatten slightly to create a pocket-ready disk: press center to make a shallow well about 2–3 inches across but leave edges thicker to seal.

Assemble filled pretzels

Place about 2 rounded tablespoons (≈30 g) of chilled crab Rangoon filling into the well of each dough disk. Fold edges up and pinch tightly to seal, then roll gently to form a smooth ball or elongated pretzel shape (sealed seam on bottom). Ensure no filling is exposed.

Baking soda bath

One or two at a time, lower filled pretzels into the simmering baking soda bath for 20–30 seconds, turning once so all sides get a quick coating — this gives pretzels their characteristic crust. Remove with a slotted spoon, drain briefly and place on prepared baking sheet seam-side down. Brush generously with egg wash and sprinkle with coarse sea salt.

Bake

Bake in preheated oven 15–18 minutes until deep golden brown and firm to the touch. Rotate halfway if necessary for even color. Remove to a wire rack and let cool 5 minutes before serving so filling firms slightly.

Prepare filling

In a bowl, beat softened cream cheese until smooth. Stir in scallions, minced garlic, soy sauce, rice vinegar, sesame oil, white pepper and lime zest. Gently fold in lump crab meat, taking care not to break large lumps; add toasted sesame seeds if using. Taste and adjust seasoning — more soy sauce for saltiness or lime for brightness. Chill filling at least 20 minutes so it firms for stuffing.

Portion filling

Scoop filling into a piping bag or small spoon to make filling each dough pocket neat and consistent (about 2 tablespoons per pretzel). Keep chilled until used.

Make sauce

If using fresh chopped red chili, steep it in 1 tbsp hot water 5 minutes to soften. In a small saucepan, combine softened chili plus its soaking liquid, rice vinegar, honey, ketchup, soy sauce and grated ginger. Bring to a gentle simmer over medium-low heat.

Thicken and finish

Whisk cornstarch with 1 tbsp cold water to make a slurry. Slowly whisk slurry into simmering sauce and cook 1–2 minutes until glossy and slightly thickened. Taste and adjust: more honey for sweetness, more vinegar for tang, or add a pinch of salt. Cool to warm or room temperature before serving alongside pretzels.
