Method
To Make the Cannoli Shells
Mix Dry Ingredients
In a large bowl, combine the all-purpose flour, granulated sugar, cocoa powder, and salt.
Add Wet Ingredients
Add the softened butter, egg yolks, and white wine (or vinegar) to the dry ingredients. Mix until the dough starts to come together.
Knead the Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth. If the dough is too dry, add water a teaspoon at a time until the desired consistency is reached.
Rest the Dough
Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature.
Roll Out the Dough
After resting, roll out the dough as thin as possible, about 1/8 inch thick.
Cut and Shape the Shells
Using a round cutter, cut out circles from the dough. Wrap each circle around a cannoli tube, sealing the edges with a little water.
Fry the Shells
Heat the vegetable oil in a deep pot over medium-high heat. Fry the shells until golden brown, about 2-3 minutes. Remove and drain on paper towels.
To Make the Filling
Prepare the Filling
In a mixing bowl, combine the ricotta cheese, powdered sugar, vanilla extract, and cinnamon (if using). Mix until smooth and creamy.
Fold in Chocolate Chips
Gently fold in the mini chocolate chips until evenly distributed.
Fill the Shells
Using a piping bag or a spoon, fill each cooled cannoli shell with the ricotta filling.
To Serve
Garnish and Serve
Dust the filled cannoli with powdered sugar before serving. Enjoy your homemade cannoli!
