Chill and prepare glass
Place a large wine glass or stemmed spritz glass in the freezer for 5–10 minutes or fill with ice while prepping to chill. Discard the chilling ice just before assembling.
Build the base
In a mixing glass or small pitcher, combine 0.75 fl oz aperitif liqueur, 0.5 fl oz fresh orange juice, 0.25 fl oz lemon juice, and 0.25 fl oz simple syrup. Stir gently to combine — do not shake with the sparkling component.
Assemble the spritz
Fill the chilled wine glass about halfway with fresh ice (approximately 1 cup). Pour the mixed base over the ice. Slowly top with 6 fl oz Chandon Garden Spritz (or other sparkling wine/aperitif spritz). Pour gently down the side of the glass to preserve bubbles and create a layered look. Stir once very gently with a bar spoon (1–2 turns) to integrate.
Garnish & Aromatics
Prepare rosemary sprig
Lightly slap the rosemary sprig between your palms or gently clap it once to release oils and aroma. Optionally, run the sprig briefly through a flame (candle) to bloom the scent — use caution.
Finish and serve
Float the rosemary sprig in the glass or rest it on the rim. Garnish with an orange wheel or twist; optionally add a dehydrated orange slice for visual appeal. Serve immediately while bubbly.
