Preparation
Chill glass
Place a large wine glass or balloon glass in the fridge for 5–10 minutes or fill it with ice water while preparing other ingredients to ensure the spritz stays cold.
Prepare garnish
Gently clap the rosemary sprig between your palms to release its aromatic oils and lightly rub it on the rim of the glass. Cut an orange wheel (about 1/4-inch thick) and prepare an orange peel twist by cutting a 1/2-inch strip of peel, avoiding too much white pith.
Assembly
Discard the chilling ice water from the glass (if used). Fill the chilled wine glass with 3–4 large ice cubes, leaving enough room for sparkling wine and red wine float.
Add the orange liqueur (or dry vermouth), fresh orange juice, and simple syrup (if using) into the glass over the ice. Stir gently once to combine these base flavors.
Slowly pour the chilled Chandon Garden Spritz (or other sparkling wine) into the glass, filling to about three-quarters full (approximately 6 oz). Pour gently to preserve bubbles.
Express the orange peel over the drink: hold the peel over the glass and give it a quick squeeze (oil side down) to spray aromatic citrus oils onto the surface. Discard or add the peel as garnish according to preference.
Place the prepared rosemary sprig upright in the drink and rest the orange wheel on the rim (or float it). If desired, lightly torch the rosemary for a few seconds to amplify aroma—do so carefully and extinguish before serving.
