Chicken and Veggie Bites
Mix the bite mixture
In a medium bowl combine 1 cup ground chicken, grated carrot, chopped spinach, diced bell pepper, chopped onion, 1 egg, 1/2 cup breadcrumbs, 1/4 cup grated cheddar, 1/2 tsp garlic (if using), 1/2 tsp salt and 1/4 tsp pepper. Use a fork or clean hands to gently mix until just combined; avoid overworking so bites stay tender. If mixture seems too wet, add up to 1-2 tbsp more breadcrumbs; if too dry, add 1 tsp water or a bit more egg beaten.
Form the bites
Use a tablespoon or small cookie scoop to portion about 1 tablespoon of mixture per bite (makes about 18–22 bites). Roll gently between palms to form small patties or balls roughly 1–1.25 inches across and place them on a plate or baking sheet.
Cook on stovetop (preferred for quickness)
Heat 1 tablespoon olive oil in a nonstick skillet over medium heat. When hot, add bites in a single layer without crowding (work in batches). Cook 2.5–3 minutes per side until golden brown and internal temperature reaches 165°F (74°C). Lower heat if browning too quickly; cover for the last minute to help cook through if needed. Transfer to a plate lined with paper towel.
Alternative oven method
Preheat oven to 400°F (200°C). Place bites on a lightly oiled baking sheet or one lined with parchment. Lightly brush tops with oil. Bake 12–15 minutes, flip once halfway, until golden and cooked through (165°F/74°C).

Arrange 1 cup baby carrots, 1 cup cucumber rounds, and 1/2 cup halved cherry tomatoes (if using) on a plate. Warm the small whole-grain pita for 15–20 seconds in the microwave or briefly in a dry skillet if desired.
Serve 6–10 kids by plating 3–4 chicken bites per child with a small ramekin of dipping sauce, a portion of the fresh veggie sticks, and half or a full small pita. For younger or smaller eaters, offer 2–3 bites each.
